The history of hunting in the Hochschwab region can be traced back to the reign of Maximilian I (about 1500).
When battues had heavily reduced the population of chamois, Archduke Johann (1782- 1859) introduced hunting rules to save the chamois population.
Chamois live in the mountains throughout the year and feed just the best and spiciest alpine herbs. The dark meat is characterized by a distinct, aromatic taste.
A further speciality is the Hochschwab deer (Cervus elephus L.). The venison is poor in calories and cholesterol, rich in vitamins and has a lower fat and higher protein level than the meat of farm animals. Venison is famous for its mineral contents and trace elements such as iron, zinc and selenium.
Traditional sausages, made from venison or chamois meat are "Rehfurter", "Hirschkrainer" and "Gamswurzen".
