- History:
The history of fishing is as old as the history of mankind. This is documented by fish relicts which were found together with human bones from prehistoric times.
Farming of trout and chars has a long tradition in the Ybbs valley. 400 years ago Carthusian monks from the charterhouse Gaming started to build ponds in the area between Gaming and Brettl. These ponds are today still called Carthusian ponds.
Cornerstones in the development of today’s European trout farming were the introduction of rainbow trout from California between 1880 and 1890 and related species/subspecies from the north-west of the USA between 1907 and 1926 to Europe. The breeding of native trouts with various types of introduced trout resulted in today’s rainbow trout, which became an economically important “animal species” around the world.
- Region:
The Ybbs valley is situated in the Ybbstaler Alpen, in the western part of Lower Austria. It is drained by the river Ybbs and its side-rivers which flow to the Danube. The cold water rich in oxygen provides optimal conditions for salmonids.
Climate condition:
The maritime climate of the Ybbs valley is characterized by abundant snowfalls and extraordinarily many days with precipitation. The annual average temperature ranges between +8 and +10°C.
Habitat:
Ponds
Salmonids are farmed in ponds supported with water from wells or from side creeks of the river Ybbs. Water temperatures range between 0 - 15°C. The water is rich in oxygen and poor in nutrients. Ponds are not fertilized.
After harvesting of fish the ponds are limed and, after a week, are ready for new stocking with fish.
- Ybbstal Forellen (Ybbs valley trout):
The word trout is used for a number of fish species belonging to the family of Salmonidae. In the context of the Region of Delight Ybbstal Forelle the term Forelle (“trout”) encompasses river trout (Salmo trutta fario), rainbow trout (Oncorhynchus mykiss), chars (Salvelinus sp.) and salmon trout.
Trout are slender fish with numerous rounded small scales and a forked tail. They have an adipose fin without bony spines towards the rear of the back.
Trout prefer clear, cold water rich in oxygen. They are cold-stenothermic, which means that they can only survive within a narrow temperature range. The optimal temperature is 8 - 18 °C.
Ybbs valley trout are 20 – 50 cm tall.
Method of production:
The salmonids are farmed in seven fish pond farms which are run either by commercial companies or smaller peasant companies.
Fish breeding:
Fish for stocking stem from own breeds or are bought from breeders in the region.
For the purpose of artificial propagation eggs and sperms are obtained by slightly pressing the fish belly backwards to the vent. For fertilization eggs and sperms are mixed and water is added. The hatched fish are raised in fish hatcheries.
Fish are bred only for marketing and not for stocking purposes of the river Ybbs.
Feeding:
Fish feed on other organisms living in the ponds and are, in addition, fed with specific feedingstuff either manually or automatically twice per day.
Harvesting, slaughter and processing:
Fish are harvested with nets or brailers. Then they are slaughtered in a stress-free way. Processing takes place in specifically adapted rooms where the fish are packed partly under vacuum.
Flesh and taste:
Ybbstal Forellen are characterized by their flesh, which is firm and very tasty. The flesh is poor in fat and calories. 100 g flesh contains about 2.7 g fat, 19.5 g protein and has about 103 calories (433 kJ).
Quality control:
The water quality of the ponds is regularly controlled by the water cluster Lunz, which is an inter-university research centre for flowing waters.
Veterinary checks are conducted on an annual basis.
- Marketing:
Ybbstal Forellen are available throughout the year. The fish farms of Göstling produce about 5,000 trouts annually (2007), but they plan to expand their capacity.
Trout are marketed directly by the fish farmers or by farmer shops, local suppliers and the local gastronomy.
Numerous fish restaurants situated along the river Ybbs and around the Lake Lunz serve Ybbstal Forellen as a regional delicacy. This is the case especially in the municipalities Lunz, Göstling and Opponitz and in restaurants along the Eisenstrasse (a touristic route through areas famous for the production of iron in the past).
